Ceviche
Serves 4
20 minutes to prepare + marinating time

You will need:
Skinless salmon fillet 250g piece
Cooked, peeled prawns 150g
Lime 3, juiced
Tomatoes, peeled, de-seeded and chopped, 3 large*
Shallot 1, finely sliced
Green chilli 1, shredded
Red Chilli 1, shredded
Coriander a handful of leaves
Slice the salmon as thinly as possible – a long, thin sharp knife will make this easier. Lay the strips over a large platter alongside the prawns. Mix together the lime juice, shallot, tomatoes and chillies (be careful when chopping chillies and wash hands thoroughly before touching anything else), season. Pour over the fish, making sure you cover all of it. Cover and leave to marinate for an hour in the fridge, the acid in the lime will “cook” the fish. Just before serving, scatter with coriander leaves.
* To peel the tomatoes, submerge them in just boiled water and leave them for 1 minute. Carefully lift them from the water and the skin should come away from the flesh. If this doesn't happen, put back in the water for a little longer.
